Cream Cheese Flan

The texture of this custard is rich & smooth. The carmelized sugar gives it a unique sweetness and the weight of the cream cheese keeps the custard from getting bubbles.

Cream Cheese Flan

3 eggs
3 egg yolks
4 oz. cream cheese
1 can sweetened condensed milk
14 oz. milk (just use the can to measure)
1 1/2 teaspoons vanilla

To Caramelize:
3/4 cup sugar

In a small saucepan caramelize the sugar by cooking it until it is a medium amber color. Pour the sugar into a pie pan or 8x8 square pan.

Blend everything for 5 minutes. Pour over carmelized sugar. Cover with foil and make sure it is sealed well. Place pie pan in a larger pan with 1/2 inch hot water. Bake at 350 for one hour.

*A note about this flan...it is the only flan that Rebecca likes because the texture is always perfect!
