Tres Leches Cake

Happy Cinco de Mayo!! This is one of my favorite treats at this time of year. It is super fast and easy.

Tres Leches Cake
6 eggs (separated)
1 cup sugar
1 tsp. vanilla
1 cup flour
1 tsp. baking powder

Heat oven to 350.

Beat egg whites until almost stiff. Beat in sugar and vanilla. Beat in egg yolks. Fold dry ingredients into your egg mixture until well mixed.

Pour into greased 9x13 pan and bake for 30-35 minutes.

Remove from oven and poke holes in the cake with a fork. Pour the milk mixture over the cake while it is still warm.

Cool in fridge for several hours, allowing the milk to flavor the cake.

Frost with whipping cream or turon.

Milk Mixture
1 can condensed milk
1 can evaporated milk
1 cup milk

Turon
1 cup sugar
1 tsp. white corn syrup
1/2 cup cold water
3 egg whites

Put egg whites in a bowl with beaters. Set aside. (do no beat yet)

Cook sugar, corn syrup and water until it gets to a hard ball stage. It will be foaming on top. Quickly beat sugar mixture into egg whites until it cools down.

Spread over cake. Use a fork to make a decorative design in the turon.
