Chocolate Sour Cream Cake

This is Florence's Favorite chocolate cake! It is moist and rich with a nice density.

Chocolate Sour Cream Cake

Combine in small saucepan and bring to a boil.  Stir constantly until chocolate is melted and smooth:
3 oz unsweetened baking chocolate
½ c. butter
1 c. water

Mix:
2 c. flour
2 c. sugar
2 t. baking soda
½ t. salt

Pour hot chocolate mixture over dry ingredients.  Add and whisk until combined.  

Whisk in:
1 c. sour cream
2 eggs
2 t. vanilla

Pour into greased 9x13 pan and bake at 325ยบ for 35-40 minutes or until cake tester comes out clean.  Cool before frosting with either Chocolate Frosting or Cream Cheese frosting. 

For a round cake, use 2 8-inch round pans.  Reduce baking time by ~ 10 minutes and increase frosting by half.

Cream Cheese Frosting

Cream:
½ c. butter, softened
8 oz cream cheese

Add:
1 t. vanilla
1 box powdered sugar

Chocolate Frosting

In saucepan over medium heat, melt:
2 oz unsweetened chocolate
6 T. butter

Cool slightly.  Add and beat well:
3 c. powdered sugar
½ t. vanilla
pinch of salt

Add enough to make creamy:
milk
