Potato Rolls

These are very moist and flavorful. I like to cut them like biscuits, brush the tops with butter, and fold them in half like a clam before baking.

Potato Rolls

1 Tablespoon yeast
1/4 cup warm water
1/2 cup Warm mashed potatoes
1/4 cup butter
1/4 cup sugar
1 1/2 teaspoon salt
1 egg
1 cup scalded milk
4-4 1/2 cups flour

Activate yeast in warm water. Mix all ingredients and knead well. Let rise until double in size. Shape and place on greased cookie sheet. Let rise again until almost double in size. 

Bake at 400 for 10-12 minutes.
